Tasting notes: Mandarin, star fruit, strawberry blossom and pomelo
Eliyas Dukamo and Atiklit Dejene produce this Elto Coffee nano-lot in Bensa, Sidama, where the JARC 74110 and 74112 varieties grow at 2,200 metres. Their work emphasizes carefully selected small lots, traceability and distinctive processing.
The ripe cherries undergo 72 hours of natural anaerobic fermentation in airtight tanks before slow drying on raised African beds. The resulting light filter roast is bright and juicy, with mandarin and star fruit leading into strawberry blossom and a vivid pomelo finish. Tanat scores the lot 88.
